Cheesy Veggie Scrambled Eggs for Kids

Eggs are a wonderful little protein powerhouse, and contain other nutrients which are great for brain development, concentration and more. Adding in grated veggies even for young children gets the used to this type of ‘omelette’ from the beginning, and gets in a good hit of fibre and antioxidants.

Benefits: rich in complete protein and will keep tummies full and satisfied. Provides 1 of the 5 recommended serves of veggies. If served with avocado, is a great source of good fats too.

Time to prep: 5-10mins

  • 1-2 eggs per person
  • 1 tbsp grated veggies per egg (eg carrot, zucchini, capsicum, onion)
  • Generous sprinkle of cheese (buy in block and grate yourself to avoid additives)

Heat some olive oil in a frying pan and add the veggies. Cook for a minute or two until softened. Crack the eggs into a cup and whisk lightly with a fork, then pour over the veggies. Give it a little stir to coat the veggies. Add the cheese and cook until the eggs are through and the cheese is melted. Serve with some cubes of avocado on the side, and optional wholemeal toast with butter.
