Raw Caramel Slice

Base

  • 1 1/2 cups pitted dates
  • 1 1/2 cups almonds
  • 3 tablespoons water

Caramel Filling

  • 1/3 cup cashew or almond butter
  • 1/3 cup coconut oil
  • 1 tablespoon maple syrup
  • 1/2 vanilla bean – seeds
  • 1/2 tsp pink salt

Chocolate Icing

  • 3 tablespoons raw cacao powder
  • 1/3 cup coconut butter melted
  • 1 tablespoon maple syrup

Method

Place dates and nuts in a blender and combine until almost fine, add a tablespoon of water at a time until base begins to form together. Line a small 20cm tray with baking paper and fill with the base, using the back of a spoon to press into the tray. Make sure there are no gaps and base is tightly packed together and set aside. Place all caramel filling ingredients into a bowl and combine. Pour onto base and place in the fridge to set for 10-15 minutes.

Meanwhile, melt coconut butter and combing with raw cacao and maple syrup, stirring until smooth. Pour over set caramel filling and return to fridge to set further. To serve, slice into small squares. Best kept in the fridge for up to 5 days.
